Why lean engines run hot

Thought this an informative video, very relevant to an air cooled engine. Certainly supports my hope that now running larger main jets may avoid the damage I had to the pistons and cylinders 1 and 4 in the last rebuild. It had run stock jetting for most of its life, which I believe to be quite lean and 1 and 4 being especially so having one size smaller main jets than the middle two cylinders.
